It’s Wednesday, you’re tired, its probably cold out, why not have some cheesy comfort food for dinner?
We started doing baked mac and cheese everyone once in a while when I’m too lazy to think about putting a real meal together or when Dad’s left to his own devices with little man. Quick, budget friendly, and great as left overs, this baked mac and cheese is sure to be a fan favorite amongst all the family members.
The ingredients are simple and you probably already have them in your kitchen. Not shown are bread crumbs or Ritz type crackers to crunch up on top.
Box of Pasta of your choice (elbows are our favorite.)
1 jar Ragu double cheddar cheese sauce
Shredded cheese of your choice (whatevers in the fridge really)
Ritz crackers or bread crumbs for topping (optional)
Preheat oven to 400°F, grease casserole pan of choice (size depends on amount if pasta, a standard 13×11 is fine) and set aside.
Cook pasta as recommended (for our family we usually do 2.5 cups of pasta but you can eyeball it.)
While pasta is cooking, cook four pieces of bacon until slightly crispy, set aside and break into pieces.
Once cooked, strain pasta and put back into original pan, pour about 3/4ths of the cheese sauce over the pasta and stir until all pasta is evenly coated and cheesy.
Pour cheesy pasta into greased pan and sprinkle bacon pieces into the pasta, stir and add remaining cheese sauce as desired.
Top casserole with shredded cheese of choice, and if desired a layer of cracker or bread crumbs.
Place in heated oven for 15 minutes or until cheese is completely melted.
Remove from oven and serve while hot!
This is great reheated the next day for lunch or a quick afternoon snack, and is super tasty with a little ketchup or barbecue sauce.
